Traditional Chinese Spring Rolls
Ingredients:
For the spring rolls:
- 10 rice paper sheets
- 100g rice vermicelli noodles
- 1 carrot, thinly sliced
- 1 cucumber, thinly sliced
- 100g bean sprouts
- 100g cooked shrimp, peeled and halved (optional)
- Lettuce leaves
- Fresh mint
For the dipping sauce:
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 1 garlic clove, minced
- Chopped red chili pepper to taste (optional)
Instructions:
- Cook the rice vermicelli noodles according to the package instructions, drain, and set aside.
- Fill a large bowl with warm water. Dip a rice paper sheet into the water until it softens (about 15 seconds).
- Place the softened rice paper sheet on a flat surface.
- In the center of the rice paper sheet, place a lettuce leaf, some carrot strips, cucumber, bean sprouts, and shrimp (if using). Add a portion of rice vermicelli and some mint leaves.
- Fold the bottom of the rice paper sheet over the filling and fold the sides in. Then, roll the spring roll tightly.
- Repeat the process with the remaining rice paper sheets and ingredients.
- To make the dipping sauce, mix fish sauce, lime juice, sugar, minced garlic, and chopped red chili pepper (if desired). Stir well to combine.
- Serve the spring rolls with the dipping sauce.
